A peach cobbler that brings everyone to the table


Nothing says summer like a delicious piece of fruit as a snack or after a hearty backyard barbecue. Better yet, try a fruit dessert to elevate your summer dining experience like our peach cobbler, we just know it'll bring your family to the table.

Serves 4

2 lbs       peach
10 ml      lemon juice
7 tlbs      sugar
1 tlbs      cornstarch 
1 g          ground cinnamon 
12 tlbs    all purpose flour 
3 tlbs      sugar 
2 tsp       baking powder
1 g          sea salt 
11 tsp     unsalted butter cubed 1 inch
120 ml    2% Milk



Pre-heat your oven to 350° F.

Blanch peaches in boiling water, then shock them in ice water to remove skins. Cut into wedges. Toss with lemon juice.

Stir together first sugar, cornstarch, and cinnamon. Sprinkle over peaches. Stir to combine. Pack tightly into your baking dish.

For the dough, mix together flour, second sugar, baking powder and salt. Cut butter into flour until mixture is a coarse crumb.

Add milk and stir just to combine. Careful not to over-mix. Knead the dough on a lightly floured surface, then roll into the shape of your baking dish.

Place snugly on top of your baking dish and lightly brush with a little cream

Bake for 22 minutes until golden brown and dough is cooked through.

Sprinkle with coarse sugar while still hot.
