Balzac’s Coffee Roasters

Our namesake, Honoré de Balzac, said “The café is the people’s parliament,” and this statement has defined us since we opened our first location in 1996. Customers of our buzzing cafés hail from every part of the world and represent a rainbow of ages and interests, with a common passion for a delicious cup of coffee.

The beans are where it all begins, thoughtfully sourced from the best coffee growing regions in the world and carefully roasted on the industry’s most eco-friendly equipment, Loring Smart Roasters. Our certified fair trade and organic facility in Ancaster, Ontario is designed to produce low emissions and a small environmental footprint, while consistently achieving optimum roast levels.  

Balzac's Coffee Roasters Café Harvest

We love fall because on September 1st, we bring our homegrown Café Harvest back to our café menus. After enjoying a Café Harvest at one of our beautiful cafés, if you’d like to make one at home, you’ll need: 


2 oz
Balzac’s Fair Trade Organic Espresso
1 cup  
2% organic milk (or milk alternative)
2 tsp  
organic pumpkin puree
1 tbsp
local organic maple syrup
pumpkin spice


Pull a double shot of espresso into your cup. Stir pumpkin puree and maple syrup into the cold milk and steam. Pour the steamed milk over the espresso and sprinkle with pumpkin spice to taste. Well done, barista!

Pale Roast

Holding back on the temperature and time of the roast cycle creates interesting and surprising flavour characteristics. Distinctly clean and effervescent in taste, this roast produces a delightful cup of coffee with subtle hints of citrus and cinnamon.

Amber Roast

 In pushing the roast to a slightly darker shade, caramel and cocoa notes are added to the flavour profile. This appealing roast maintains a balance of acidity and body, resulting in a smooth and satisfying brew.

Stout Roast

 Going at full throttle, these beans are literally getting “smoked” in the roasting drum, bringing flavourful oils directly to the surface. The richness and fullness of body command your attention and complement any decadent pairing.

Diana Olsen is president and founder of Balzac's Coffee Roasters. Passing many enchanting afternoons in the Grand cafés of Paris, Ms. Olsen was inspired to bring this sophisticated celebration of coffee and social tradition home to Canada with Balzac's Coffee Roasters.

Unlike other coffee roasters that offer light, medium and dark roasts, we developed a proprietary technique that is the best of all words. Our Marble Roast™ marries our three signature roasts to create one incredible blend. We combine our Pale Roast’s clean, effervescent taste, our Amber Roast’s smooth, satisfying balance and our Stout Roast’s rich, full-bodied punch to create our Marble Roast™, otherwise known as a celebration of flavour in your cup.

I’m partial to the Atwood Blend, a mild Amber Roast with cocoa notes and a supple, caramel finish. It started out as a passion project in partnership with author Margaret Atwood; we developed this signature blend using certified Bird Friendly® South and Central American coffees grown in habitats that provide shade and diversity of trees to preserve and protect bird populations. $1 of the proceeds from each bag sold is donated to the Pelee Island Bird Observatory, our local bird conservation and research body, and we’ve raised over $23,000 to-date! This blend can be found at all Pusateri’s locations.
