Brown Sugar & Thyme Glazed Heirloom Carrots

Serves 4-6

Available in a variety of colours, heirloom carrots are the best tasting, most beautiful carrots available. Roasting them and coaxing out their sweetness with a bit of brown sugar is our favourite way to prepare them.        

   

Ingredients

heirloom carrots, peeled
2 tbsp 
brown sugar
2 tbsp
Pusateri’s Delicato Extra Virgin Olive Oil
6 sprigs 
thyme, leaves removed from the stem, plus more for garnish
1 tbsp 
salt
6 cloves 
garlic, roughly chopped

 

Roasted Heirloom Carrots 

  1. Preheat oven to 350°F.
  2. In a large bowl, coat carrots with the remaining ingredients.
  3. Place carrots on a lined baking sheet and scrape olive oil mixture overtop.
  4. Bake for 40 minutes – turning once – until carrots are soft and easily pierced with a skewer.
  5. Garnish with additional sprigs of fresh thyme.

 

Tip

Choose a rainbow of colourful purple, orange and yellow carrots for a stunning Thanksgiving side.
