Holiday classic recipes, revisited: Turkey “Porchetta”



Want to change up your Christmas menu this year? Try our turkey "porchetta", a wonderful substitute to the standard roasted bird.


Serves 8-10

  • 1       double breast turkey roast boneless with skin on or whole bird.


For the spiced fennel rub: 

  • ½ cup           fennel seed
  • 2 tbsp          dried rosemary
  • 1 tsp             chili flakes
  • 1 tbsp           ground coriander
  • 2 tbsp          ground oregano
  • 2 tbsp          granulated garlic
  • 1 tsp             black pepper


Rub fennel seasoning over turkey along with desired amount of salt. Roast in a pan with raised grill at 325F uncovered until internal temp of 165F is reached. Remove from the oven and let rest slightly covered for 15 minutes then serve.


Tip: For the best flavour, start seasoning a whole turkey the day before roasting and don't forget to coat the inside cavity for intense flavour.
