Lemon blueberry mascarpone parfait


Wow your guests with a gourmet dessert that is delightful in taste and is easy to make. 


Yields 5 cups

1 container Mascarpone cheese
1 tbsp Lemon oil
500 ml 35% cream
1 pint Blueberries
75 grams Granulated white sugar
50 ml Red Wine
1 pack  Pizzelle 
100 grams  Icing sugar 





Whip cream in mixer with icing sugar and lemon oil till high peaks form. Add room temp mascarpone and continue to whip for 2-3 minutes. Cover and refrigerate the parfait mixture.

In a pan heat red wine and sugar for 2-4 minutes till syrupy, add blueberries and simmer till reduced. Let cool. 

Scoop parfait mixture into serving containers and add cooled blueberry filling. Garnish with Pavesini cookies or pizzelle and serve.
