Orchard cranberry sauce

Not your ordinary cranberry sauce, my version gives this holiday staple a fresh new taste.  


Yields 2 cups

  • 1 Cup                   Water
  • 1 Cup                   White Sugar
  • 1 (12 Ounce)       Package Cranberries
  • 1                            Orange - cut into segments
  • 1                            Apple - peeled, cored and diced
  • 1                            Pear - peeled, cored and diced
  • 1                            Star Anise                     
  • ½ tsp                    Salt        
  • ½ tsp                    Ground Nutmeg
  • 1 tsp                      Ground Cinnamon
  • 1 tsp                      Lemon Juice
  • 30ml                     Grand Marnier


In a medium saucepan, boil water and sugar until the sugar dissolves. Reduce the heat to simmer, and stir in cranberries, puréed orange, apple, pear, salt, cinnamon, star anise and nutmeg. Cover, and simmer for 30 minutes, stirring occasionally, until the cranberries burst. Add lemon juice and Grand Marnier, stir vigorously and remove from heat. Allow to cool to room temperature.
