Pea, Mint, & Goat Cheese Salad

Ingredients

1 lb Peas, shucked and blanched
200 g Goat cheese, crumbled
200 g Wild arugula, washed and spun
10 leaves Leaves mint roughly chopped
4 oz Pusateri’s Balsamic Vinaigrette
1 tbsp Lemon zest
2 tbsp Lemon juice

 

Steps

Mix all ingredients in a bowl. Toss and serve.
