Smoked Turkey and Egg Muffins


Breakfast is the best way to start the day and a busy one if you have a few mouths to feed. To make breakfast easier, bake these breakfast muffins on Sunday and refrigerate for the rest of the week. In the morning just pop them in the oven or microwave.

If you have picky eaters make your own cereal bars with their favourite cereal. Just stir warmed nut butter and cereal together, then mould into a bar form. Let cool and enjoy! 

Serves 4

4 eggs Vita Eggs
4 slices Smoked turkey (or smoked ham)
100 g Shredded cheddar
100 g Spinach – steamed cooled, drained and chopped
Pam cooking spray
Salt and pepper to taste
Parchment paper


1. Preheat oven to 350°F.
2. Cut parchment paper circles and place inside the wells of a large muffin tray. Spray with Pam.
3. Fit one slice of turkey or ham into each muffin cup so that extra hangs over edges of cups.
4. Add a thin layer of spinach over top ham.
5. Crack one egg into each cup, then top with a sprinkle of cheddar.
6. Bake for 15-20 minutes, removing once egg whites are set.
7. Carefully pick up both sides of parchment to remove the muffins. Add salt and pepper to taste.
