Spicy Jícama, Cucumber & Fruit Skewers

Sweet, salty and spicy play together in this refreshing summer treat, a dolled up and party-ready version of a beloved street food snack. Enjoy as an appetizer or alongside our Grilled Queso Cotija with Dill Chimichurri.

Serves: 2

1 small
Jícama, peeled and cut into ¾” slices
English cucumber, cut into ¾” slices
Small pineapple, peeled and cut into ¾”slices
Large mangos, peeled and cut into large slices
Bamboo skewers
Lime, cut into 8 wedges
2 tbsp.
Guajillo or ancho chile
2 tsp.

  1. Use a 1 ½” round cutter to cut circles out of the fruit and vegetable slices. Thread the circles on the skewers, alternating fruits and vegetables.
  2. Mix the chile and salt and put into a small shaker (like a salt shaker). Lightly sprinkle the skewers on all sides with the mixture.
  3. Arrange skewers on a platter and scatter lime wedges around. Serve with the spice shaker so your guests can add more seasoning to suit their tastes.

If you’ve traveled in Mexico, you’ve surely seen (or tried) street vendors’ preparations of cut fruit and vegetables with lime, chile and salt. You’ll be amazed at how addictive and refreshing this mixture can be, whether served on skewers or as a sweet and spicy salad!
