If you’re looking for a change to your salads at lunch, try our kale, avocado and peach salad. Light, with a fragrant fruit flavour it’s sure to add some excitement to your day.
1 bunch kale, stems removed
½ ripe peach, pitted and diced
½ ripe avocado, pitted and diced
4 tbsp ricotta cheese
10 roasted almonds, slightly chopped
Balsamic Vinegar Dressing:
3 tbsp olive oil
1 tbsp balsamic
½ tbsp honey
½ tbsp Dijon mustard
To prepare the dressing, whisk all ingredients together in a bowl until properly mixed. Cut kale into thin strips and transfer to a stainless steel bowl. Add small amount of dressing and season lightly. Transfer to plate.Top kale with avocado, almonds peaches and ricotta cheese. Pour prepared dressing over the salad.
