Known for their leaner, gamey flavour profile, Pheasant is a perfect substitute for a Turkey or Cornish Hen. Along with roasting in the oven, Pheasants are ideal to slow cook, simmering in a Pasta Sauce or stewing for a classic Pheasant Cacciatore.

Chef's recommendation

For simmering in tomato sauce: season meat then sauté and submerge in tomato sauce in a pot on top of the stove at a medium heat. For Braising: season meat, brown, add stock, wine, vegetables and slow cook at (300°F). For stove top simmering: season and sauté, add stock, wine, vegetables and slow cook on medium heat on top of the stove.
