Premium fresh white truffles (Latin: tuber magnatum pico) are harvested and arrive by-air from the forests of Istria (Croatia) and Alba, Piedmonte (Italy); where they naturally grow a few inches underground near the roots of hardwood trees. These regions provide exceptional quality, consistency and the most fragrant and tasty truffles. White truffles in particular are the most desired for their unforgettable deep and earthy flavours, adding rich depth when shaved as paper-thin slices over fresh pasta, risotto, egg, and meat dishes.
